Recipe

Step 1: Wash the Vegetables

Start by washing the carrot, tomato, potato, onion, ginger, and other vegetables properly under running water.

Drain them and pat them dry before cutting.

Step 2: Cut the Vegetables

Peel and cut the potato and carrot into small pieces.

Finely chop the onion, tomato, ginger, and any other vegetables you’re using.

Cut or crumble the paneer into small pieces if you’re adding it.

Keeping the vegetables small helps them cook faster.

Step 3: Wash the Dalia and Moong Dal

Wash the dalia and moong dal thoroughly under running water.

Drain the excess water and keep them aside.

Step 4: Roast the Dalia

Heat a pan or pressure cooker over medium heat.

Add the dalia and dry roast it for a few minutes, stirring continuously.

Once it becomes lightly aromatic, transfer it to a plate and keep it aside.

Step 5: Prepare the Tempering

Add 2 tablespoons of oil to the cooker or pan.

Add the whole cumin and let it crackle.

Then add the whole chilli and chopped ginger.

Sauté for a few seconds until fragrant.

Step 6: Add the Onion and Vegetables

Add the chopped onion and cook until it becomes slightly soft.

Then add the carrot, potato, tomato, and other vegetables.

Add the cumin powder and salt, and mix everything together.

Cook for a few minutes.

Step 7: Add the Dalia and Moong Dal

Add the washed moong dal and roasted dalia to the cooker.

Mix everything well so the dalia, dal, vegetables, and spices are evenly combined.

If you’re using paneer, add it after the khichdi is cooked.

Mix it gently and let it cook for another minute or two so it warms through.

Step 8: Add Water

Add enough water to get a soft khichdi-like consistency.

Mix everything together and check the salt.

Step 9: Cook the Khichdi

If using a pressure cooker, close the lid and cook for around 2–3 whistles on medium heat.

Let the pressure release naturally before opening the cooker.

If you’re using a regular pot, cover it and cook until the dalia, moong dal, and vegetables become soft, stirring occasionally and adding more water if needed.

Step 10: Serve Hot

Open the cooker and give the khichdi a good mix.

If it’s too thick, add a little hot water and adjust the consistency.

Serve it hot and enjoy your comforting homemade dalia khichdi.

Warm. Filling. Nutritious. And easy on the wallet. It’s perfect for those days when you’re hungry but don’t want to spend too much time cooking. With just some dalia, moong dal, vegetables, and a few basic spices, you can make a wholesome one-pot meal at home. Sometimes, simple food is all you need.
