After a long and stressful day at work, I was completely exhausted. I was hungry, but the thought of making a proper dinner felt like another task I just didn’t have the energy for. I wanted something quick and easy, but I also didn’t want to end the day with a heavy or unhealthy meal.
I checked what I had in the fridge and found some lettuce, cucumber, tomatoes, and paneer. That was enough to put together a simple salad. I quickly sautéed the paneer with a little salt and pepper until it was slightly golden, then tossed it with the fresh vegetables.
The warm paneer with the crunchy cucumber, juicy tomatoes, and fresh lettuce made the salad surprisingly satisfying. A squeeze of lemon, along with some salt and pepper, was all I needed for the dressing.
After a tiring day, this was exactly the kind of dinner I wanted—quick, healthy, filling, and easy on the pocket. It took very little effort, didn’t leave me feeling too heavy, and meant I could finally sit down and relax after work.

How to Make It
1. Prep the vegetables

2. Lightly sauté the paneer
Heat ½ tsp oil or butter in a pan over medium heat. Add the paneer cubes and sprinkle with a little salt and black pepper. Sauté for 2–3 minutes, turning occasionally, until the paneer is lightly golden on the outside. Don’t cook it for too long or it can become chewy.
3. Assemble the salad

4. Season and serve

This salad is crunchy, refreshing, and surprisingly filling thanks to the paneer. The warm peppery paneer with cool cucumber, juicy tomato, and crisp lettuce makes it a great low-effort meal when I want something light but don’t want to stay hungry.
