Papaya, Potato & Carrot Stew with Egg: A Cheap, Comforting Meal
GOOD FOOD. SMALL BUDGET. NO NONSENSE.

Coming home after work on a chilly night, the last thing I wanted was to spend a long time in the kitchen. I was tired, hungry, and honestly just craving something warm that would make me feel a little better.

I opened the fridge and found some raw papaya, a potato, and a carrot. There were also a couple of eggs, so I decided to turn everything into a simple one-pot stew.

I sliced some onion and garlic, added a small pinch of butter to the pot, and let them soften until the kitchen started smelling warm and comforting. Then I added the papaya, potato, and carrot with nothing more than salt and black pepper.

I covered the pot and let everything simmer until the vegetables became soft and tender. The papaya softened beautifully and gave the stew a lovely texture, while the potato made it hearty enough for dinner.

I boiled an egg on the side, sliced it in half, and added it to my bowl. To make the meal more filling, I toasted two slices of brown bread.

There was something so comforting about sitting down with a steaming bowl of homemade stew after a long, cold day. It wasn’t fancy, but it was exactly what I needed.

And the best part? I didn’t have to order dinner or spend a lot of money. Just a few basic ingredients, one pot, and a little time.

Recipe

Prepare the vegetables

Wash the papaya, potato, carrot, and onion thoroughly before cutting them.

Peel and cut the papaya and potato into small cubes. Slice the carrot, onion, and garlic.

Start with the onion and garlic

onion-and-garlic

Heat a pot over medium heat and add the butter.

Add the sliced onion and garlic and sauté for 1–2 minutes until softened and fragrant.

Add the vegetables

Add the potato, carrot, and raw papaya.

Season with salt and black pepper and give everything a good mix.

Pour in about 1½ cups of water and bring it to a gentle boil.

Simmer

salt

Cover the pot and let the stew simmer for around 15–20 minutes, or until the vegetables are soft.

The papaya will soften as it cooks, while some pieces may break down slightly and naturally thicken the broth.

Add the egg

Boil one egg separately, peel it, and cut it in half.

Once the vegetables are cooked, place the egg halves into the stew and let them warm for a minute.

Taste and adjust the salt and pepper.

Toast the bread

Toast two slices of brown bread until crisp.

You can add a very small amount of butter if you like.

Serve

Pour the hot stew into a bowl and place the boiled egg halves on top.

Serve with the two brown bread toasts on the side.

I like dipping the crispy toast into the warm broth—it makes the whole dinner feel extra comforting.

This simple dinner combines vegetables, egg, and whole-grain bread to provide fibre, protein, vitamins, and energy. The papaya and carrot add beta-carotene and other nutrients, while the egg provides protein to make the meal more satisfying. Brown bread adds extra fibre and carbohydrates for energy.
