No Fancy Ingredients! This Loaded Omelette Is Quick, Healthy & Cheap
GOOD FOOD. SMALL BUDGET. NO NONSENSE.

Today was one of those mornings when I had absolutely no time to make breakfast. My work schedule was packed, I had things to finish before leaving, and spending 30 minutes in the kitchen was simply not an option. I was tempted to skip breakfast altogether, but I knew I would be hungry before lunchtime.

So, I opened the fridge, grabbed two eggs and whatever vegetables I could find, and decided to make a quick loaded veggie omelette. I chopped some onion, tomato, capsicum, carrot, and sweet corn, mixed everything with the eggs, and cooked it in one pan. In about 10 minutes, breakfast was ready!

It was colourful, filling, and packed with protein and vegetables. No complicated cooking, no expensive ingredients, and hardly any time spent in the kitchen.

If you’re also rushing through busy mornings, this easy omelette might just become your go-to breakfast!

Step-by-Step Recipe: Loaded Vegetable Omelette

Step 1: Prepare the vegetables

Wash the onion, tomato, capsicum, carrot, green chilli, and coriander leaves thoroughly. Finely chop the onion, tomato, capsicum, green chilli, and coriander. Grate the carrot so it cooks quickly, and keep the sweet corn ready. Since this recipe is meant for busy mornings, cutting the vegetables into small pieces will help the omelette cook faster and more evenly.

Step 2: Beat the eggs

egg

Crack two eggs into a medium-sized bowl. Add salt to taste and ¼ teaspoon of black pepper. Using a fork or whisk, beat the eggs until the yolks and whites are completely combined and the mixture looks slightly frothy. Beating the eggs well helps create a softer, fluffier omelette.

Step 3: Mix in the vegetables

Add the chopped onion, tomato, capsicum, grated carrot, sweet corn, coriander leaves, and green chilli to the beaten eggs. Stir everything together so the vegetables are evenly distributed throughout the mixture. If you prefer a milder breakfast, skip the green chilli. Avoid adding too many watery vegetables, as they can make the omelette difficult to flip.

Step 4: Heat the pan

Place a non-stick frying pan over medium-low heat and add one teaspoon of cooking oil. Swirl the pan gently to coat the bottom with oil. Allow it to heat for a few seconds, but do not let the oil smoke. Medium-low heat helps the eggs cook through without burning the bottom.

Step 5: Pour in the egg mixture

Pour the prepared egg and vegetable mixture into the heated pan. Use a spatula to spread it gently into an even layer. If some vegetables collect in one area, distribute them carefully so every bite has a good mix of eggs and vegetables. Let the omelette cook undisturbed for about 2–3 minutes, until the edges begin to set and the bottom turns lightly golden.

Step 6: Flip the omelette carefully

Once the underside is firm, slide a spatula underneath the omelette and flip it gently. If it feels too soft to flip, cover the pan with a lid for another minute to help the top set. You can also fold the omelette in half instead of flipping it completely. Cook the other side for another 1–2 minutes, or until the eggs are fully cooked and no runny egg remains.

Step 8: Plate and serve

Turn off the heat and transfer the omelette to a plate. Serve it hot for a quick breakfast. You can sprinkle a little extra coriander or black pepper on top for added flavour. The eggs provide protein, while the mixed vegetables add colour, fibre, and a variety of nutrients.

Time-saving tip: Chop the vegetables the night before and store them in an airtight container in the refrigerator. In the morning, simply beat the eggs, mix in the prepared vegetables, and cook. This makes it easier to prepare a homemade breakfast even when your work schedule is packed.
