Some mornings, I want a breakfast that is quick to prepare but still feels like a proper meal. I don’t always have the time or energy to cook something elaborate, especially when I have a busy day ahead. That’s when I like to use simple ingredients already available in my kitchen to make something delicious without spending too much.
This time, I had some bread, eggs, carrots, capsicum, tomato, and sweet corn. Instead of making a regular omelette and serving it separately, I decided to pour the beaten egg and vegetable mixture directly over the bread while it cooked in the pan. The bread soaked up some of the egg mixture, while the vegetables added colour, texture, and flavour.
The best part is that everything cooks together in one pan. The bread turns golden and lightly crisp on the outside, while the egg and vegetables make each bite soft, savoury, and satisfying. It’s an easy way to enjoy eggs and vegetables in the morning without making a complicated breakfast.

Quick Step-by-Step Recipe
Step 1: Prepare the vegetables

Finely chop the carrot, capsicum, and tomato into small pieces so they cook quickly. If you’re using onion, chop it as well. Use boiled sweet corn to save time in the morning.
Keep the vegetables ready before you start cooking. Smaller pieces spread more evenly through the egg mixture and make the toast easier to cook.
Step 2: Prepare the egg mixture

Crack one egg into a bowl and whisk it with a fork until the yolk and white are well combined. Add the chopped carrot, capsicum, tomato, sweet corn, and onion, if using.
Season with salt, black pepper, and chilli flakes or green chilli according to your taste. Add a tablespoon of milk or water if you prefer a slightly lighter mixture, then stir everything together.
Step 3: Heat the pan and arrange the bread
Heat a non-stick frying pan over low to medium-low heat and add the oil or butter. Spread it around the pan so the bread doesn’t stick.
Place the two bread slices in the pan, leaving a little space between them. Let them warm for around 30 seconds. Keeping the heat moderate helps the egg cook without burning the underside of the bread.
Step 4: Pour the egg and vegetable mixture over the bread

Pour the egg and vegetable mixture slowly over the bread slices, distributing the vegetables evenly. Use a spoon to guide the mixture onto the bread and into any gaps around the edges.
Some egg may spread into the pan, which is fine. Gently press the vegetables into the egg with the back of a spoon so they stay in place as the mixture cooks.
Step 5: Cook until the egg sets
Cover the pan with a lid and cook over low heat for approximately 3–5 minutes. The gentle heat helps the egg cook through while the bread develops a lightly golden base.
Check that the egg is no longer runny and that the vegetables are tender. If the top is still wet, cook for another minute or two with the lid on. Make sure the egg is fully cooked before serving.
Step 6: Flip carefully and toast the other side

Once the egg mixture has set, carefully flip each bread slice using a wide spatula. If some egg has spread around the bread, tuck it underneath before flipping.
Cook the other side for another 1–2 minutes until golden and crisp. If you find the slices difficult to flip, you can skip this step and continue cooking covered until the egg is fully set.
Step 7: Serve hot

Transfer the egg and vegetable toast to a plate. Sprinkle with fresh coriander, extra black pepper, or chilli flakes if desired.
Serve immediately while the bread is warm and crisp. Pair it with tea, coffee, or a little tomato ketchup for a quick breakfast before heading out for the day.
