Some mornings, I barely have enough time to get ready for the day, let alone prepare an elaborate breakfast. Between getting dressed, organising everything I need, and planning the day ahead, cooking a proper meal can feel like one more thing on an already busy schedule. But I also don’t want to skip breakfast or settle for something that leaves me hungry again in an hour. I want something homemade, tasty, filling, and affordable that doesn’t take too much time or effort.
That’s when I thought of making this quick vegetable bread poha. I had a few slices of bread and some vegetables sitting in the kitchen, so instead of making a regular sandwich or eating plain toast, I decided to turn them into something more flavourful. I chopped some onion, tomato, carrot, and capsicum, then added mustard seeds, curry leaves, turmeric, and a little green chilli for that familiar Indian-style flavour.
The best part is that I didn’t need any fancy ingredients or special equipment. Everything came together in a single pan, and the vegetables cooked quickly while the bread soaked up all those delicious spices. In about 15 minutes, I had a warm, colourful breakfast ready to serve. The soft bread, lightly cooked vegetables, and fragrant tempering made a simple combination feel much more satisfying.
For me, this is exactly what budget cooking should be about. You don’t need expensive ingredients or complicated recipes to make a delicious meal. Sometimes, a few everyday kitchen staples are all you need to prepare something comforting, nutritious, and filling. This vegetable bread poha is a simple way to make busy mornings a little easier while enjoying a homemade breakfast without spending too much.

Step 1: Prepare the ingredients

Cut 3 slices of bread into small, bite-sized cubes and set them aside. Finely chop the onion, tomato, carrot, and capsicum so they cook quickly and mix evenly with the bread.
If you enjoy a little heat, finely chop one green chilli as well. Preparing everything before you start cooking makes the process much quicker, especially on busy mornings.
Step 2: Prepare the tempering

Heat 1 teaspoon of oil in a pan over medium heat. Add ½ teaspoon of mustard seeds and let them splutter. Next, add 6–8 curry leaves and the chopped green chilli, if using. Sauté for a few seconds until the curry leaves release their aroma. This simple tempering gives the bread poha a lovely Indian-style flavour without requiring too many spices.
Step 3: Cook the vegetables

Add the chopped onion to the pan and sauté for 2–3 minutes until it softens and becomes slightly translucent. Add the chopped carrot and capsicum, nuts then cook for another 2–3 minutes, stirring occasionally.
Next, add the chopped tomato, ¼ teaspoon of turmeric powder, and salt to taste. Mix everything well and cook for a few more minutes until the tomato softens and the vegetables are tender but still retain a little bite. If the mixture begins to stick to the pan, sprinkle in a teaspoon or two of water and stir.
Step 4: Add the bread cubes
Add the bread cubes to the cooked vegetable mixture. Gently toss everything together so the bread absorbs the flavour of the mustard seeds, curry leaves, turmeric, and vegetables.
If the bread feels too dry, sprinkle a little water over the mixture. Avoid adding too much, as the bread can become soggy. Cook for another 2–3 minutes over low heat, stirring gently so the bread warms through without breaking apart. Taste and adjust the salt or spices if needed.
Step 5: Garnish and serve hot

Turn off the heat and squeeze a little lemon juice over the bread poha for a fresh, tangy flavour. You can also garnish it with freshly chopped coriander if you have some available.
Transfer the vegetable bread poha to a plate and serve it while warm. Pair it with a cup of tea or coffee for a simple breakfast. With everyday ingredients, one pan, and approximately 15 minutes of cooking time, you have a quick, colourful, and budget-friendly meal ready for a busy morning.
