Equipment

  • 1 Pressure Cooker
  • 1 Ladle
  • 1 Plate
  • 1 Knife
  • 1 Chopping Board

Ingredients

  • Rice – ½ cup approximately 90–100 g uncooked
  • Soya chunks – 25 g
  • Carrot – ½ small finely chopped
  • Capsicum – ¼ medium chopped
  • Onion – ½ medium finely chopped
  • Green chilli – 1 finely chopped (optional)
  • Ginger-garlic paste – ½ teaspoon optional
  • Garam masala – ¼ teaspoon
  • Black pepper powder – ¼ teaspoon or to taste
  • Red chilli powder – ¼ teaspoon optional
  • Salt – to taste
  • Oil – 1 teaspoon
  • Water – approximately 1 to 1¼ cups adjusted for your rice and pressure cooker

Step-by-Step Instructions

Wash and Prepare the Ingredients

potato
Wash the carrot, capsicum, and green chilli thoroughly before cutting them. Peel and finely chop the onion, carrot, and capsicum. Chop the green chilli if you’re using it.

Rinse the rice under running water until the water runs mostly clear. Set it aside.

Prepare the Soya Chunks

Boil the soya chunks in water for about 5–7 minutes, or follow the package instructions. Drain them, rinse with clean water, and squeeze out the excess water once they’re cool enough to handle.

Cut larger chunks into smaller pieces if you prefer. This helps them absorb the spices and mix evenly with the rice.

Sauté the Onion and Vegetables

saute
Heat 1 teaspoon of oil in your pressure cooker. Add the chopped onion and green chilli, and sauté until the onion starts to soften.

If using ginger-garlic paste, add it now and cook for another 30 seconds. Add the chopped carrot and capsicum, and sauté for 2–3 minutes.

Add the Soya Chunks and Spices

Add the prepared soya chunks to the cooker. Sprinkle in the garam masala, black pepper, red chilli powder, and salt.

Mix well and cook for 1–2 minutes so the soya chunks absorb the flavours. Taste the spice mixture and adjust the chilli or pepper if needed.

Add the Rice and Water

rice
Add the washed rice and gently mix it with the vegetables, soya chunks, and spices.

Pour in the water, adjusting the amount to suit your rice variety and pressure cooker. Stir once to distribute the ingredients evenly.

Pressure-Cook the Rice

Close the pressure cooker securely and cook according to your rice variety and cooker’s instructions. White rice often cooks in around 1–2 whistles, but timing and whistle counts vary by cooker and rice type.

Turn off the heat and allow the pressure to release naturally before opening the cooker. Never force the lid open while the cooker is still pressurized.

Check that the rice is tender and the soya chunks are heated through. If the rice is still firm, add a little hot water and cook briefly until done.

Fluff and Serve

Gently fluff the rice with a fork or spoon, mixing the vegetables and soya chunks throughout.

Serve hot on its own, or pair it with plain curd, raita, or a simple cucumber salad for a more complete meal.

Tips to Make It Even Better

  • Add more vegetables: Green peas, beans, or sweet corn work well in this recipe.
  • Adjust the spice level: Skip the green chilli or reduce the chilli powder for a milder meal.
  • Use leftover rice: If you already have cooked rice, sauté the vegetables, soya chunks, and spices separately, then toss everything together instead of pressure-cooking the rice again.
  • Make it more filling: Serve with curd or raita.
  • Store leftovers safely: Refrigerate cooked rice promptly, ideally within one hour in hot weather and no later than two hours after cooking. Reheat thoroughly before eating.

This one-pot soya and vegetable rice is a simple way to prepare a filling, flavourful meal without using several pans or expensive ingredients. With rice, soya chunks, fresh vegetables, and everyday spices, you can make an affordable lunch or dinner even on your busiest days.
