Recipe
Step 1: Wash the Vegetables
Start by washing the onion, tomato, green chilli, ginger, and garlic properly under running water.
Drain and pat them dry before cutting.
Step 2: Boil the Eggs
Place the eggs in a saucepan and add enough water to cover them completely.
Bring the water to a boil and cook the eggs for around 9–12 minutes.
Turn off the heat, drain the hot water, and place the eggs in cool water for a few minutes.
Peel the eggs once they have cooled.
Step 3: Prepare the Vegetables and Eggs

Chop the green chilli, ginger, and garlic as well.
Make a few small cuts on the boiled eggs. This helps the curry flavour reach the eggs.
Step 4: Lightly Fry the Eggs
Heat a little oil in a pan.
Add the boiled eggs and lightly fry them until they develop a little colour on the outside.
Remove the eggs and keep them aside.
Step 5: Prepare the Masala

Add the remaining oil to the same pan.
Add cumin seeds and let them crackle.
Add the chopped onion and cook until it becomes soft and lightly golden.
Then add the ginger, garlic, and green chilli.
Sauté for another minute.
Step 6: Add Tomato and Spices

Add the chopped tomato.
Then add turmeric, red chilli powder, coriander powder, and salt.
Cook until the tomato becomes soft and the oil starts to separate from the masala.
Step 7: Make the Curry
Add around 150–200 ml of water, depending on how much gravy you want.
Mix everything well and bring the curry to a gentle boil.
Step 8: Add the Eggs

Place the fried boiled eggs into the curry.
Cover and simmer on low heat for around 5–7 minutes, allowing the eggs to absorb some of the flavour.
Add garam masala and mix gently.
Step 9: Wash the Rice
While the egg curry is simmering, wash the rice thoroughly under running water.
Rinse it a few times until the water becomes relatively clear.
Step 10: Boil the Rice
Add the washed rice to a pot with enough water.
Cook over medium heat until the rice becomes soft and fully cooked.
Drain any excess water if needed and let the rice rest for a couple of minutes.
Step 11: Serve

Add the hot rice to a plate or bowl.
Pour the egg curry over or serve it alongside the rice.
Add the eggs on top and garnish with fresh coriander if you have some.
And that’s it!
Spicy. Delicious. Filling. And easy on the wallet.
With just a couple of eggs, some rice, vegetables, and basic spices, you can make a satisfying homemade meal without ordering food.
Simple ingredients, big flavour, and no need to break the bank.
